Buttermilk Pancakes

Light, fluffy, and delish. Our birthday go-to recipe. Kobenko boys approved!

Ingredients:

  • 2 cups of all-purpose flour

  • 3 tablespoons sugar

  • 1 1/2 teaspoons of baking powder

  • 1 1/2 teaspoons of baking soda

  • 1 1/4 teaspoon of kosher salt

  • 2 1/2 cups of buttermilk

  • 2 large eggs

  • 3 tablespoons of unsalted butter (melted)

How to make:

  1. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl..

  2. Make a hole in the center of the dry ingredients and add cracked eggs, buttermilk, and melted butter.

  3. Stir everything together with a whisk, but do not over mix. It's okay if the mixture has lumps.

  4. Heat a large nonstick pan or my personal favorite cast iron skillet on medium to low heat.

  5. Spread butter evenly on the hot pan and pour the batter onto it using a ladle or 1/3 measuring cup.

  6. Flip the pancakes when bubbles form on the surface and the bottom is golden brown and then enjoy!

Delicious with syrup, Nutella, jam, fruit, cream.

Enhance pancakes with food coloring for a vibrant, festive touch thats perfect for Birthdays or holidays.
