Bacon Egg Bites
Ingredients:
6 pieces of bacon
6 large eggs
1 1/4 cups of cottage cheese
1 1/4 cups of shredded cheddar jack cheese
2 tablespoons of cornstarch
1/4 teaspoon of salt
1/8 teaspoon of black pepper
1 tablespoon of Tabasco sauce
How to make:
In a oven safe dish fill it with half water and put it on the lower rack and preheat your oven to 350 degrees. The water helps create steam to best cook the egg bites.
Chop up six pieces of bacon into small bits and cook them on a skillet or cast iron until they are crispy then set aside.
In a blender, combine the 6 large eggs, 1 1/4 cups of cottage cheese, 1 1/4 cups of shredded cheddar jack cheese, 2 tablespoons of cornstarch, 1/4 teaspoon of salt, 1/8 teaspoon of black pepper and a tablespoon of Tabasco hot sauce and blend until completely smooth.
Spray a muffin tin with cooking spray and evenly distribute the mixture filling each slot about three quarters full. Once the mixture is evenly distributed add the crispy bacon on top.
Bake for 20 minutes or until you can see the egg bites start to pull up. Don’t over bake, you want that puffy texture vs crispy ends.
Once the egg bites are done let it cool for a couple minutes and Enjoy!
